Most do not — the underlying key is the same, but Jira (like most software) maps Ctrl on Windows/Linux to Cmd on Mac for standard operations. Where a shortcut is platform-specific, this page notes the Mac variant next to the Windows one.
J and K move the highlight to the next and previous issue in a list, board column or search result, O opens the highlighted issue and E edits it. With an issue highlighted or open, A assigns (type a name), M jumps to the comment box, and the other single letters — I for assign to me, L for labels — are on the ? list. C creates an issue from anywhere with the current project preselected.
Press G and then a letter: G + D goes to the dashboard and G + B to the current board; G then A opens administration and G then G opens a quick-search of navigation targets. / focuses the search box, where JQL such as assignee = currentUser() AND status != Done can be typed directly. On the board, arrow keys move between cards once one is highlighted.
